Sunday Eats: Mini Blini

Looking for a light, refreshing and simple dish, I had planned to make these Cornmeal Blini Bites from the Food Network earlier this weekend but reserved them for today.  The ricotta cheese, honey and (in season) seedless green grapes atop mini cornmeal pancakes sounded too appetizing to pass up… and I am so thrilled I gave them a try!


  • (1) 8.5-ounce box corn muffin mix (such as Jiffy brand)
  • 1/2 cup milk
  • 1 egg
  • 1 cup Extra-Virgin Olive Oil
  • 1/2 cup ricotta cheese
  • 18 seedless green grapes, halved
  • Honey, for drizzling


Beat corn muffin mix, milk and egg together in a small bowl. Heat a nonstick skillet and add 1/4 inch of Extra-Virgin Olive Oil to the pan. Drop spoonfuls of batter into the oil to make small pancakes, cooking until bubbles appear on the tops and the bottoms are golden, 1 to 2 minutes. Flip and finish cooking.

Slice seedless grapes in half. Top each Cornmeal Blini with a teaspoon of ricotta cheese and a sliced grape half. Drizzle with honey and serve warm.

Note to self (and others): try to make tiny cornmeal pancakes, it is amazing how the batter expands once it settles into the pan and these tasty treats are meant to be finger food, not a meal in need of a fork! 

Husband Tested: the hubby enjoyed and really appreciated the hard work but did mention they were a little frou-frou for his liking. Next time I will make these for the girls!
